Ingredients:
- 1 cup millet (Any variety)
- 250g prawns (cleaned)
- 2 onions (sliced)
- 2 tomatoes (chopped)
- 2 tbsp oil or ghee
- 1/2 cup curd (yogurt)
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 tsp biryani masala
- 1 tbsp ginger-garlic paste
- Fresh coriander and mint leaves
- Salt to taste
Method:
- Cook the Millet: Rinse and cook millet in 2 cups of water with a pinch of salt. Fluff and set aside.
- Marinate the Prawns: Mix prawns with ghee, turmeric, chili powder, garam masala, and salt. Let it rest for 20 minutes.
- Prepare the Masala: Heat oil in a pan, sauté onions until golden. Add ginger-garlic paste, tomatoes, curd, and spices. Cook for 5 minutes.
- Cook the Prawns: Add marinated prawns and cook for 5-7 minutes until tender.
- Assemble the Biryani: Layer cooked millet over the prawn masala. Sprinkle coriander and mint leaves. Cover and cook for 5 minutes.
- Serve: Enjoy with raita or salad.
