The Senegalese chef and co-founder of Yolélé Foods has placed fonio in Whole Foods, Trader Joe's, Sainsbury's and Waitrose, transforming an obscure West African grain into a globally recognised superfood. His cookbook "Senegal" and TED talk on fonio have reached millions.
