Five different sugars (stachyose, raffinose, sucrose, glucose, and fructose) were identified, with sucrose predominating in all cultivars. Raffinose content was notably higher compared to other cereals, and maltose was absent. The objective of this study was to analyze the sugar content and composition of nine millet cultivars.
